So I found an awesome mode with a trick of the settings.

I leave my watch on Ambient because I like it but its annoying when simple movements set the display to full color and brightness. I'd rather it stay B/W with low brightness until I interact with it.

So set your watch to Ambient and turn off Wrist detection. The watch will STILL turn on to your wrist but only to the ambient mode and will never go full brightness until you interact with it.

Used it all day and got great battery life!
